The hospitality nature of Zum Hirschen

Living in the mountains has taught us respect for the environment and the importance of making sustainable choices in everyday life. The key word for us is ‘harmony’: it is essential to form harmonious relationships with nature, animals and everything around us. We have consciously approached this philosophy since the restructuring of Zum Hirschen, maintaining and enhancing the historical identity of the medieval building, energetically upgrading it and giving new life to the grandparents’ furniture through restoration. The strength of our environmentally friendly choices continues in the kitchen and in wellness, as we favour seasonal, short-chain ingredients and certified organic products. Through a series of authentic experiences in close contact with nature, workshops and excursions, we engage our guests in a sustainable journey that regenerates the body and energises the mind.

Conscious taste

In addition to regional organic raw materials, we follow the principles of Slow Food, are inspired by the culinary philosophy of Hildegard of Bingen and the advice of the herbalist Weidinger.

Bio Wellness

Natural home-made soaps, Bio products for wellness self-treatments.

Sustainability for living

We have renovated the historic hospice according to the dictates of sustainable architecture and favouring natural materials.

Medicinal plants

A workshop with which guests can approach the use of medicinal plants, both in the kitchen and for wellness.

The best rooms

Silence, contemplation, design: the 25 exclusive rooms of Hotel Zum Hirschen are a refuge in which rest is elevation of the soul. It is no coincidence that, in order to give guests a disconnection from everyday life, there are no TVs or radios in the rooms and WiFi is switched off from midnight. Instead of the classic minibar there is a box with drinks and local organic snacks, and the courtesy set is plastic free.

Village / park

These rooms encourage introspection, contemplation and tranquillity, just like the pilgrims’ cells in the ancient medieval building. Every detail respects the structure of the past: the minimalist design; the fabric of the curtains reminiscent of the materials used for the monks’ robes; the washbasin and rain shower connected directly to the sleeping area, while the toilet and bidet remain separate… just like in the Middle Ages, but with all the modern comforts.

Mountain / Forest

The furnishings and structure of these rooms respect the style of the 1960s, the period to which the central building in which they are located dates. Simplicity and refinement are found in the fir wood of the furniture, the natural larch floors, the chain lamps, the Plank Stube chairs and the small heart engraved in the bedside table, typical of Tyrolean stube rooms. Even the choice of mustard yellow and carmine red colours for the cushions is not left to chance, but is inspired by the dandelion and late radicchio, found in Alta Val di Non.

The LUC rooms are a representation of present times, with an eye to the future. They are located on the third floor, have a purist design and black and white multi-layer birch wood furniture. Even the floor and ceiling smell of forest, thanks to the natural larch wood. Large windows and plenty of light complete the scenic presence of these rooms with a modern take on Alpine style. The name is inspired by the dialect name of Monte Luco, which some of the rooms overlook.

The Cuisine

The principles of Slow Food, the holistic approach of Hildegard di Bingen, all the herbal knowledge of the herbalist pastor Weidinger, are the three cornerstones on which the culinary work of Hotel Zum Hirschen is based. The ingredients, mainly regional and seasonal, come from small local farms or cooperatives in the valley: organic cereals and flour, organic rye bread, dairy products, Speck, meat, cheese and organic eggs from free-range hens.

Fresh raw materials and zero waste are two other essential choices, and it is no coincidence that food scraps are used for compost or given to the neighbouring farm for animal feed.
